    • To be honest, I am not entirely sure why the recipes for flaxseed meringue all require you to boil the flax seeds but I suspect that the cooking process helps get all of the substance out of the flaxseeds that turn water into an egg-white like substance that can be whipped into a foam. While soaking flaxseeds in water alone will turn the mixture gloopy, I think once you strain out the flax seeds, you would not be able to whip the remaining mixture. With the cooked flaxseeds, once you strain out the seeds what remains is a liquid that is similar to raw egg white (and sometimes so stringy you need a knife to divide it).
